I wanted to second the book from Khushbu Shah - not because I've engaged with it much but because that delectable saag paneer lasagna (recipe also published on NYT Cooking) was the star dish of our Thanksgiving this year. It was absolutely delicious and also a nice way to honor my parents, who are retiring back in India next year after 45+ years in the U.S. It seemed like the perfect "fusion" dish, and it definitely did not disappoint! Oh, and I'm also a huge fan of Meera Sodha's recipes and books as well - will have to try that mushroom bao.
